ANIMAL WELFARE Grass-reared cattle lead a healthy, less stressed life. No artificial preservatives or hormones are used in raising them.
NUTRIENT RICH Grass-reared beef contains up to six times more Omega-3 than grain-fed beef. It contains less fat so is lower in calories.
Not all meat is created equal: grass-fed animals in pastures recycle carbon back into the soil and take longer to mature, resulting in a premium quality meat with a lower carbon footprint.

Our sustainability journey began when we publishedthe Dark Side of Hospitality – an exposé of the dramatic impact the hospitality industry has had on the environment – through energy and water consumption and use of consumables.
This was an eye-opener to many – not least of all us – and today, driven by much more savvy customers, sustainability is widely regarded as the key to a successful 21st century business. Sustainability and social responsibility is a prime concern for public and private sectors alike – the hospitality industry is no exception.
True sustainability: all of our furniture, ceramics, art, lighting, fixtures and fittings were designed and built locally.
The Big Issues
FOOD WASTE: Every year the hospitality industry generates 46million tonnes of food waste which ends up in landfill and contributes to methane emissions.
ENERGY WASTE: Many hospitality businesses continue to use outdated appliances and lighting systems – wasting energy and increasing their carbon footprint.
WATER WASTE: The industry uses vast amounts of water – from producing food to providing amenities – putting pressure on an already scarce water resources.
PLASTIC WASTE: The sector is a primary user of single use plastics – generating tonnes of plastic waste which takes hundreds of years to decompose.
CARBON EMISSIONS: Globally, the industry produces 1.2 billion tonnes of CO2 – accounting for 5% of carbon emissions – a significant contribution to climate change.

WASTE REDUCTION: We’ve reduced our waste to landfill to ZERO. We compost on site to use in our garden and we use recycled polyboxes and glass water bottles.
LED LIGHTING: We use LED lighting and motion sensors in our kitchen and restaurant and smart lighting which adjusts to natural light levels.

A Greener World
Over recent years we have put together a team of passionate professionals dedicated to helping the hospitality industry transition to Net Zero.
Antonio’s Bar & Grill became a pilot restaurant for Net Zero Hospitality UK in 2021. Our aim was to find cost effective ways to reduce carbon footprints in the sector and help reach the worlds 2030 Climate Goals.
Our project has resulted in the development of a strategic 4-day training programme designed for owners, managers and staff within the hospitality sector. We empower people with the specific processes required to replicate our findings.
Quite simply, we show the hospitality sector how easy it is to adapt their business to create a more sustainable future.
